Our journey begins with the finest olives sourced directly from trusted local farmers in the Dumrea region. Upon arrival at our facility, the fruit undergoes rigorous washing and sorting.
We strictly reject damaged fruit, ensuring only the firmest, healthiest olives proceed to the curing stage.
We respect tradition. Our olives are cured using only water and salt—no chemical accelerators or artificial dyes.
The fermentation process takes months, allowing the natural bitterness to fade while developing the complex, savory profile that distinguishes Sagelo olives.
